Loaded Gluten Free Oatmeal Cookies


Oatmeal cookies loaded with chocolate chips, raisins, coconut, almonds and apple, this cookie will definitely fill you up and keep you going all day long!  These cookies are also kid tested and approved so you know they won’t last long!


  • 1/4 cup almond meal
  • 1/4 cup quinoa flour
  • 1/4 cup teff flour
  • 1/4 cup tapioca starch
  • 1/2 cup potato starch
  • 1 tsp xantham gum
  • 1 tsp cinnamon
  • 1/2 cup butter, softened
  • 1/2 cup apple sauce
  • 1 tsp vanilla
  • 1/2 cup white sugar
  • 1 cup brown sugar
  • 2 eggs
  • 3 cups gluten free rolled oats (I buy my oats at Bulk Barn)
  • 1/2 cup raisins
  • 1/2 cup chocolate chips
  • 1/4 cup shredded coconut
  • 1/4 cup sliced almonds


  1. Preheat oven to 375 degrees and line two baking sheets with parchment paper.
  2. In a large bowl combine almond meal, quinoa flour, teff flour, tapioca starch, potato starch, xantham gum and cinnamon.
  3. In a mixing bowl mix butter, white sugar, brown sugar, vanilla and eggs together until well blended.  Add apple sauce and mix well.  Add dry ingredients, then rolled oats 1/2 cup at a time until well blended.
  4. Finally, add raisins, chocolate chips, almonds and coconut and mix well.
  5. Drop cookies by the spoonful onto the baking sheets making sure to leave a couple of inches between each cookie to spread.
  6. Bake in preheated oven for approximately 7 – 9 minutes (until cookies are slightly golden brown on top).
  7. Enjoy!
