Turkey Meatballs

Easy to make, toddler approved, nutritious and most importantly, gluten free!

Ingredients:

  • 1lb ground turkey
  • 1/4 cup shredded carrot
  • 1/4 cup shredded zucchini
  • 2 tbsp finely diced red onion
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 cup gluten free bread crumbs (try Pane Riso bread crumbs, available in Walmart)
  • 1 jar of your favourite pasta sauce
  • Mozzarella cheese & Parmesan cheese

Directions:

  1. In a mixing bowl, combine turkey, carrot, zucchini, onion, Italian seasoning, salt and bread crumbs
  2. Roll mixture into small balls and brown in a skillet
  3. Meanwhile, heat pasta sauce in a large saucepan
  4. Transfer meatballs into the pasta sauce and simmer for at least 30 minutes
  5. Serve meatballs on top of your favourite corn or rice pasta and sprinkle mozzarella and Parmesan cheese over the entire dish.
