Strawberry Feta Salad

It’s strawberry season and what better way to celebrate this sweet fruit then a lovely gluten free salad!  This salad is a great addition to any summer meal and a good option to bring to a summer BBQ.

Ingredients (serves 10)

  • 1/2 cup slivered almonds
  • 1 1/2 tsp honey
  • 1 tsp Dijon mustard
  • 2 cloves garlic, minced
  • 1/4 cup raspberry red wine vinegar
  • 2 tbsp balsamic vinegar
  • 2 tbsp brown sugar
  • 1/2 cup vegetable oil
  • 1 head romaine lettuce, chopped
  • 1 1/2 cup sliced strawberries
  • 1 cup crumbled feta cheese

Directions:

  1. In a small bowl, whisk together honey, mustard, garlic, vinegars, brown sugar and vegetable oil.  Refrigerate until ready to use
  2. In a small skillet, over medium heat, toast almonds until slightly brown
  3. Combine lettuce and feta cheese and toss with salad dressing (slowly add dressing until you feel you have enough – there is usually extra you can save for another use).  Top salad with strawberries and toasted almonds and serve
