Sweet Potato Salad

Sweet potato is such a versatile vegetable – it can be combined with so many different ingredients.  I usually mash them up with some brown sugar, cinnamon and maple syrup, which taste very good.  Today, however, I decided to put a little twist on my regular sweet potato recipe, and made a delicious sweet potato salad. 

Ingredients – Serves 4

  • 1 apple, cut into cubes
  • 2 sweet potatoes cooked, cut into cubes
  • 1/4 cup dried cranberries
  • 1/4 cup chopped pecans
  • 1 1/2 tbsp honey
  • 1 tbsp olive oil
  • 1/4 cup orange juice
  • 1/4 tsp cinnamon
  • 1/8 tsp allspice
  • 1/8 tsp nutmeg


  1. Cook sweet potatoes, drain and let cool
  2. Place apple, sweet potato, dried cranberries and pecans into a large bowl
  3. In a separate bowl, combine the remaining ingredients and whisk
  4. Pour the dressing over the sweet potato mixture – pour a little at a time and use only what you want
  5. Serve immediately or place in fridge for an hour to let the flavours combine
