Spinach & Pear Salad

Now that I have started in real estate, I don’t have as much time to prepare dinner.  I threw together this Spinach and Pear Salad a few nights ago as a side dish for chicken parmesan (https://katieskitchen1.wordpress.com/2010/05/26/chicken-parmesan/).  It is really easy to make and a great variation to a regular green salad.

Ingredients – serves 2

  • 2 cups fresh spinach
  • 1/2 pear, chopped
  • 1/4 cup grated Gruyère cheese
  • 1/4 cup chopped walnuts
  • 1 tbsp olive oil
  • 1/2 tbsp cider vinegar
  • 1 tsp Dijon mustard
  • fresh pepper

Directions:

  1. In a small bowl, combine olive oil, cider vinegar, mustard and fresh pepper.  Set aside
  2. In a large bowl, combine spinach, cheese, walnuts and pear.  Drizzle prepared dressing over top
