Carmelized Onion, Apple and Gruyere Pizza

This evening, our dinner was quick and easy – a perfect dinner scenario for a Friday night.  I had a frozen batch of the Gluten Free Girl’s delicious minestrone soup (http://glutenfreegirl.blogspot.com/2005/12/gleaming-bright-in-dark-night-kitchen.html) and one frozen batch of my gluten free pizza dough.  I defrosted both in the fridge throughout the day and voila….dinner is served.  I decided to jazz up the pizza dough with a delicious combination of toppings, including carmelized onion, apple, Gruyère cheese and a white bean spread.

Ingredients

  • 4 tsp olive oil
  • 2 small red onions, thinly sliced
  • 2 small red apples, thinly sliced
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 2 tbsp fresh lemon juice
  • 1/2 tsp salt
  • 1 tsp chopped, fresh rosemary

  • 1 1/2 cups shredded Gruyère cheese
  • 1/3 cup chopped pecans

Directions:

  1. Follow recipe for gluten free dough and bake (step 5 – https://katieskitchen1.wordpress.com/2010/05/20/gluten-free-pizza-pie/)
  2. Heat oven to 450 degrees
  3. In a large skillet, saute red onion with 2 tsp olive oil for 2 minutes.  Add 3/4 cup of water, bring to boil, and cook another 5 minutes
  4. Add apple and cook until tender and liquid has evaporated
  5. Mash white beans in a mixing bowl and add lemon juice, 2 tsp olive oil, rosemary, salt and 3 tbsp water
  6. Spread half of bean mixture onto baked pizza dough, along with half of apple/onion mixture, half pecans and half of cheese.  Repeat with second baked pizza dough.
  7. Bake in oven for 5 – 7 minutes, or until cheese has melted
