Orange Almond Bars

The combination of orange and almond are one of my favourite flavour combinations.  These bars are chewy on the inside and slightly crunchy on the outside and the batter is uncharacteristically easy to work with (most gluten free batter is really sticky).  I hope you find these bars as delicious and easy to make as I did.

Ingredients:

  • 1/2 cup sorghum flour
  • 1/2 cup almond meal
  • 1/4 cup potato starch
  • 1/4 cup tapioca starch
  • 1/4 cup sweet rice flour
  • 1 tsp xantham gum
  • 2 tsp baking powder
  • 1 tbsp grated orange zest
  • 1/2 cup unsalted butter
  • 1 cup white sugar
  • 1 tsp almond extract
  • 1 egg
  • 2 tbsp milk
  • 1/2 cup sliced almonds

Directions:

  1. Preheat oven to 325 degrees
  2. In a medium bowl, mix together flours, xantham gum, baking powder and orange zest
  3. Use an electric mixer to cream butter, sugar, almond extract and egg.  Slowly beat in dry ingredients until well combined
  4. Line a baking sheet with parchment paper and separate dough into two pieces and form each piece into a log (about 3″ wide).  Make sure to leave enough space between logs for dough to spread
  5. Brush logs with milk and sprinkle with almonds, pressing in lightly
  6. Bake in oven for 20 minutes until edges are lightly browned.  Remove from oven, let cool and slice into bars.  Return to oven for 10 minutes
