Chocolate Peanut Butter Bars

The perfect recipe for those of you who are craving a Reese Peanut Butter Cup….without the wheat flour, of course!  This recipe makes about 24 bars.  I usually freeze them and bring them out whenever I’m in need of a quick dessert to serve to guests.  Enjoy!

Graham Cracker Crumbs:

  • 1 cup sweet rice flour
  • 1/3 cup tapioca starch
  • 3 tbsp potato starch
  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 1/2 cup chopped walnuts


  1. Mix ingredients and spread evenly in a 9×13 pan.  Bake at 350 degrees for 10 minutes.  Stir until well crumbled.  Return to oven and bake 10 minutes more until browned evenly.


  • 1 cup creamy peanut butter
  • 1 cup unsalted butter, melted
  • 2 cups chocolate chips
  • 2 3/4 cups icing sugar


  1. In a medium bowl, stir together graham cracker crumbs, icing sugar, peanut butter and melted butter.  Press firmly in the 9×13 pan.  Melt chocolate chips in microwave.  Spread melted chocolate over the crumb crust.  Chill for 5 minutes in fridge, then cut into bars before the chocolate is completely set.  Chill in fridge until ready to serve or freeze bars in freezer and take out as needed.
