Oven Roasted Tomatoes with Chives

Tomatoes are so delicious at this time of the year.  I am always searching for easy side dishes to serve with dinner and this recipe fits the bill. 

Ingredients – Serves 4

2 pints grape tomatoes, halved

1 tsp olive oil

1 tsp dried rosemary

sea salt and pepper

1/4 cup chopped chives

Directions:

Toss grape tomatoes with olive oil.  Place on a lined baking sheet.  Sprinkle rosemary, sea salt and pepper over top of tomatoes.  Place in oven at 450 degrees for about 15 minutes or until tomatoes begin to brown on bottom.  Place tomatoes in a bowl and toss with chives and serve.
