Many times, I come across delicious looking recipes that call for a can of cream soup. One of my very favourite comfort foods is tuna casserole. It’s so easy to make and only requires a few ingredients. Unfortunately, one of those ingredients is cream of mushroom soup. I have not come across a cream soup that does not contain flour. Luckily, I now have a recipe that is a great replacement for the regular canned soup. Simply make this soup and add whatever ingredient you need – mushrooms, celery, chicken, etc.
1 cup cold milk
2 tbsp cornstarch
1 1/2 tbsp butter or margarine
1 tsp chicken bouillon (I use Knorr brand, which is gluten free)
1/4 tsp salt
dash of pepper
Whisk together milk and cornstarch in a small saucepan. Add remaining ingredients. Bring soup to boil, whisking constantly until the soup has thickened. Remove from heat and add sautéed mushrooms, celery or chicken. Add to any recipe that calls for a can of soup.
This recipe yields the equivalent to one can of soup
