The perfect accompaniment to my Coconut Shrimp recipe. This salad is full of flavour and colour.
1 mango, chopped
2 tbsp dry shredded unsweetened coconut
1/4 cup cilantro
3 green onions
2 tbsp cashews, chopped
1 tbsp fresh basil
1/4 cup chopped cucumber (optional)
1/4 cup sweet red pepper (optional)
1 tbsp tamari
1 tbsp lime juice
1/2 tbsp brown sugar
1/2 tsp thai chili sauce
1. Toast coconut in pan and leave to cool.
2. Combine chopped mango, half the coconut, cilantro, onions, basil, cucumber and red pepper
3. Combine dressing ingredients and toss with salad one tablespoon at a time. I prefer to use a little less of the dressing (about 1/2 to 3/4 of total amount), but it’s up to you.
