Apple Cinnamon Muffins


These muffins are really moist and light.  They are very different from the dense texture of typical gluten free muffins.   I typically freeze the leftover muffins individually to have as a quick, on-the-go snack.

Ingredients – Makes 12

1/4 cup teff flour
1/4 cup tapioca starch
1/2 cup sorghum flour
1/2 cup potato starch
1 1/2 tsp xantham gum
1 1/2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp allspice
1/3 cup olive oil
1 cup brown sugar
2 tsp vanilla
2 eggs                                                                                                                                                                 1/4 cup unsweetened apple sauce
1 apple – peeled and shredded
1/2 cup chopped walnuts or raisins (optional)


1. Preheat oven to 350 degrees

2. Whisk together dry ingredients

3. In a separate bowl, mix together wet ingredients and brown sugar.  Add dry ingredients.

4. Stir in apples and walnuts/raisins (if desired)

5. Spoon into muffin cups

6. Bake 18 – 20 minutes
