Today, was a beautiful, sunny day.  Emily and I hosted her Bubbie for lunch.  While Emily showed how she could get more food on her face then in her mouth, her Bubbie and I enjoyed some refreshing gazpacho.  This recipe is really easy to make and can be made in well in advance. 

Ingredients – Serves 4

2 cups tomato juice (or vegetable cocktail)

1/2 red onion, minced

1/2 green bell pepper, chopped

1/2 cucumber, peeled and chopped

1 cup tomatoes, chopped

1 green onion, chopped

1 clove garlic

3 tbsp fresh lemon juice

2 tbsp red wine vinegar

1/4 cup cilantro

1 tsp dried basil

1 tsp white sugar

sea salt & pepper to taste

dash or two of hot sauce (if you like some spice)


Easy – blend all ingredients in a blender or food processor until well-combined but still slightly chunky.  Chill at least 2 hours before serving.
