Salmon is one of my favourite dinners – there are so many different and easy ways to make salmon delicious. This dish can be made in the morning and thrown in the oven for a quick and delicious dinner.
Serves 4 – Ingredients:
Lime Dijon Sauce:
1 cup low fat sour cream
2 tbsp snipped fresh chives
1 tsp liquid honey
1 tsp Dijon mustard
2 tsp grated lime zest
2 tbsp liquid honey
1 tbsp grated lime zest
1 tbsp freshly squeezed lime juice
1 tbsp Dijon mustard
4 salmon fillets
1. Combine all ingredients for the sauce in a small bowl. Cover and refrigerate for at least 1 hour to allow the flavours to blend.
2. In a small bowl, combine honey, lime zest, lime juice and Dijon mustard. Pour sauce over salmon and marinate in fridge for at least an hour. .
3. Remove salmon from fridge, place on a baking sheet lined with foil. Broil for 5 – 6 minutes on each side.
4. Top salmon with sauce and enjoy!
Serve with some steamed veggies and rice or potatoes
