Baked Scallops

Scallops are simple and versatile.  You can be creative with the ingredients and most recipes are easy to prepare.  This recipe is great for garlic lovers and is very easy to make:

Ingredients:

4 tbsp butter 

1 ½ lb bay scallops

1/2 cup bread crumbs (gluten free)

1 tsp onion powder 

1 tsp garlic powder

½ tsp paprika

½ tsp dried parsley

3 cloves garlic, minced

¼ cup Parmesan cheese

Directions:

1. Preheat oven to 425 degrees

2. Melt butter and garlic cloves and pour into a casserole dish. Add scallops.

3. Combine remaining ingredients and sprinkle over scallops.

4. Bake 20 minutes – broil 5 minutes to crisp up

  1. This looks delicious – I love scallops. A note on brown rice – I find it hard to wait the 45 minutes it takes to cook. It always seems to take so long, and I often forget to put it on to cook on time. So, yesterday I bought the Minute Rice parboiled brown rice. Takes five minutes. Supposed to be as good as the long-cook version. Know what? Not so much. FAIL
