Tilapia is such a delicious, light-tasting fish….perfect for dinner on a warm summer evening. Top with a creamy dill sauce, serve with some potato salad and go out on the patio and enjoy.
1/4 cup sour cream
2 tbsp mayonnaise
1 tbsp fresh dill
1 tbsp fresh chives
1 tsp finely chopped capers
4 portions tilapia filets
1/2 tsp salt and pepper
2 tbsp arrowroot starch
2 tsp unsalted butter
1. Grate 1/2 of lemon for zest (1 tsp) and juice (1 tsp). Cut remaining lemon piece into four wedges and set aside. Stir sour cream with the mayonnaise, dill, chives, capers, lemon zest & juice until well combined. Reserve.
2. Season tilapia filets with salt and pepper. Lightly coat each piece of fish in arrowroot starch. Shake off excess.
3. Heat butter in a skillet over med-high heat. Add fish and cook on each side until golden brown.
4. Serve each piece of fish with a dollop of sour cream mixture and a lemon wedge.
